The classes are designed to go beyond simple identification and discover the culinary potential of delicious seasonal wild edibles.

Wild Food Materclasses

Course description

You will be involved in preparing and cooking food over the wood fire and of course tasting the dishes throughout the day. We will demonstrate some preserving methods and everyone will make some preserves to take home. We will talk about foraging and plant identification and together prepare a lunch based around our foraged ingredients. These one day courses are great for those who cook already and want to know more about using wild ingredients or indeed anyone who likes to try something new. All our masterclasses are based in our woodland kitchen and all the cooking will be on wood fires or in our wood fired earth oven.

Wild Garlic & Nettles

Two of the easiest wild foods to indentify, but still their incredible versatility and nutritional benefits are often unexplored. This day course looks at the flowers, stalks and seeds of wild garlic and the many culinary uses of nettles. There are so many ways to enjoy these wonderful ingredients, from tempura garlic flowers to garlic dolmades, nettle pasta, nettle pesto, wild garlic spring rolls and nettle cheese. Chris will demonstrate and everyone will be able to join in cooking over the camp fire, making preserves and of course, tasting the dishes.

Elderflower & Other Edible Flowers

Elderflower is Chris’s favourite summertime scent. Learn how to make Elderflower fritters, syllabub, sweets and jellies. But we don’t stop here and will be using other seasonal flowers to create delicious dishes that make the most of nature’s floral bounty. There will be a session on drinks including Elderflower Cordial, Champagne, Wine and Liqueur. You will learn how to get the bugs off your blooms, how to avoid exploding champagne, which blooms to pick and which other flavours to combine with these wild beauties.

Wild Summer Herbs

Herbs are so important in cooking, they can give wonderfully subtle scents to sauces or highlights to broths and both sweet and savoury dishes can be brought to life by their heady aromas. You will learn where and when to find wild herbs and how to preserve them. We will demonstrate some preserving methods and there will be a chance for everyone to make some preserves to take home. From flavoured oils and alcohol to herb jellies and chutneys there is a wealth of possibilities to try with wild summer aromatics.

Wild About Berries

Hedgerow berries – fun to collect ...sooo many vitamins and so many things to make. Get stuck in to stocking up the winter larder. Join in making chutney, ketchups, jams, jellies and more. This is a day of boiling, sieving, straining and cooking on the wood fire. You will come away with jars of preserves to impress your friends and the knowledge to do it all again.

Acorns & Other Nuts

This is an ingredient that the keenest cooks among you will love. Acorns have a nutty, caramel flavour that can be used in ice creams, custards and sweets or in savoury dishes like stuffing, burgers and bread. As well as cooking with acorns we will look at other wild nuts and their uses. You will be involved preparing and cooking food over the wood fire and of course tasting the dishes throughout the day.
